Bread spice, finely cracked, for aromatic bread

The finely cracked bread spice gives every home-baked loaf a wonderfully savoury taste. The harmonious blend of caraway, coriander and fennel is finely balanced and makes for a particularly digestible aroma. Thanks to the fine grind it mixes evenly into the dough, ideal for classic rye and farmhouse breads or your own creations.

Recipe tip for quark spice bread:

Knead a bread dough from 250 g wholemeal wheat flour, 200 g wholemeal rye flour, 1/8 litre of water mixed with 6 g of yeast and a little flour (starter), 1 tbsp of salt dissolved in 1/4 litre of water, 2 tbsp of the bread spice and 250 g of low-fat quark. After proving, put it into a greased and floured loaf tin.

Let it prove again, then bake at 190°C for one hour on the lowest shelf.

Store in a dry place, protected from heat.
