Organic nettle
The nettle grows in thick clumps beside old walls or on waste ground. It is covered all over with stinging hairs. They have a peculiarly pungent smell; the taste is tart and slightly bitter.
Store in a dry place, protected from heat.
Preparation: pour 1/4 litre of boiling water over one teaspoon of herbs and leave to steep, covered, for 3 to 5 minutes.
